Grilled Broccoli, Cauliflower, and Carrot Medley
Yummy veggie side dishes that were also healthy were always a struggle when I was younger. I could not come up with healthy recipes that everyone would enjoy, yet alone, love.
Believe it or not, the recipe below is one of those recipes that seems too simple to be that good. Every time I make it, it is a hit! And, it is versatile. If you don’t like carrots, substitute those out for chopped sweet potato or squash. Perhaps your family doesn’t like cauliflower but they love Brussel’s Sprouts; trade them out. Chop up a bunch of veggies that your family enjoys, use the olive oil, coriander and garlic powder, and bake. Then, voila! You have a side dish that I know will become a family favorite.
Ingredients:
Olive Oil
1 head of organic cauliflower, chopped
2 large bunches organic broccoli, chopped
3 large carrots, peeled and chopped
2 tsp Garlic Powder
2 tsp coriander
Directions:
Preheat oven to 350 degrees. Assemble veggies in a 9 x 13” Pyrex glass dish. Coat veggies with olive oil. Add seasonings. Bake for 20-25 minutes depending on desired veggie tenderness.
